Chicken Meatballs and Sweet Potato Chips

Dietitian approved chicken meatballs and sweet potato chips! This meal provides energy, protein and nutrients for children to grow. Sweet potato is full of vitamins A & C, the antioxidant beta-carotene which is needed for healthy skin, immunity and eye health and fibre. Chicken offers protein for growth and B vitamins that are needed to convert the food we eat into energy and for cell growth!





500g chicken mince

1-cup breadcrumbs

1 egg

1/3 cup finely grated parmesan

2 tablespoons finely chopped flat-leaf parsley


Sweet Potato Chips

350g Sweet Potato, peeled, cut into chips

2 teaspoons olive oil

Pinch paprika




Chicken Meatballs

Preheat oven to 220°C/200°C fan-forced. Line 2 oven trays with baking paper

Combine mince, breadcrumbs, egg, parmesan and parsley in a bowl. Roll heaped tablespoons of mixture into balls. Place on one of the trays

Bake for 20-25 minutes until golden and cooked through


Sweet Potato Chips

Meanwhile place chips on remaining tray and toss with oil and paprika. Bake for 25-30 minutes until golden and tender

Serve meatballs with chips
